I've been considering getting an ND filter or two when I happened to come across this Fader ND Filter from Light Craft Workshop which has a 1-8 stop light-reduction range.

Has anyone got/used/heard of these before?

Video of the fader in action

Any thoughts? Because this looks to be a better and more flexible proposition to carry around in my kit bag than a couple of stackable ND Filters.

Never heard of that one.
Do you know the SinghRay Variable ND?
It is expensive, but excellent.
If you already have a polarizer, try another cheap polarizer.   I would imagine you would have just made your own ND fader, but using known quality filters.
Use 2 cheap, good, linear polarizers.
